I am usually a plane jane when it comes to my sandwiches. I love a classic turkey with cheddar, mayo, lettuce, onion and tomato on a sourdough roll. It is truly a classic for a reason! It’s just good!
While I will never give up my classic turkey cheddar sandwiches, there is a special place in my heart for this vegetarian rainbow veggie sandwich.
If you have been around here long enough you might have picked up on the fact that I love goat cheese. I want it on my salad, cheeseboards, by the spoonful and on this sandwich! The tangyness of the goat cheese goes so well with the fresh veggies. The marinated jar of sun dried tomatoes is an easy hack that packs so much flavor! Not to mention the crunch-tastic-ness happening squished between those slices of bread.
Ingredients Needed
Sandwich Fixings
1 french bread loaf
8 tomato slices
1/4 cup shredded carrots
1/2 yellow bell pepper, sliced
1/2 cup arugula
8 cucumber slices
1/2 avocado, sliced
1/4 cup red onion, sliced
8 pickled beet slices
8 ounces goat cheese
Sun Dried Tomato Spread
7 ounce jar of marinated sun dried tomatoes
How to Make the Rainbow Veggie Sandwich
The sun dried tomato spread is the easiest part of this recipe! I don’t think I can even call it a recipe since it’s so easy! Making the spread is more like a step to deliciousness. A bonus of using a jar of marinated sun dried tomatoes is that you can make the spread last minute. No need to let the flavors meld together because they already have been doing that in the jar!
For the spread just add the sun dried tomatoes and half of the oil into a food processor. Blend this all together into a smooth paste. My food processor is not that great so my spread is a little chunky but I still enjoyed it! Once the sun dried tomatoes are smooth check the thickness of the spread. You want to be able to easily smooth the spread and let some of the oil soak into the bread.
If it needs to be thinner slowly add more of the jarred oil to loosen up the spread. If the spread is too thin you can add bread crumbs, herbs or parmesan to thicken it up. Don’t forget to taste test to see if you need any added salt and pepper.
Slice the french bread loaf in half long ways to build the rainbow veggie sandwich. Pop the cut side up under the broiler dry and toast lightly. It will only take 1-3 minutes to toast so don’t walk away from the oven! The cut side should be slightly browned and crispy but the inside fluffy and soft for the best sandwich.
To build the sandwich, spread the goat cheese over the bottom slice and the sun dried tomato spread across the top piece. Starting backwards on the goat cheese slice, lay each ingredient on top of one another to create a rainbow. I also recommend a light sprinkle of salt and pepper on the tomato and avocado layers.

This giant sandwich is the perfect packed picnic lunch for a group of 4! You just make one giant sandwich, wrap it up and slice it into 4 mini subs. I wrapped my sandwich in parchment paper, which I just unrolled and used as my plate. Which means you get to pack less things in your picnic basket!
