Loaded Bacon Shrimp Guacamole

Guacamole is simply delicious! There is no way around it. It is a must have topping on tacos, quesadillas and my go to snack during the summer. Guacamole is light but filling and has some great healthy benefits! Let’s be honest though, I would eat it even if it wasn’t healthy. You really just can’t go wrong with gucamole!

Normally I will just mash up the avocado with some salt and pepper and call it a day. Simple goodness at its finest. Haters will say that it doesn’t count as guacamole and that it is actually an avocado smash. And you know what I have to say about that? Nothing because I was taught to keep my mouth shut when I have nothing nice to say! Haha. While simple guacamole is my go to, sometimes I will get a little fancier and add some jalapenos, cilantro, red onion and lime. Got to walk on the wild side sometimes!

This Loaded Bacon Shrimp Guacamole recipe though, I took it up a couple more notches by adding some crispy bacon and chopped shrimp. Woah! Crazy I know! But trust me it is so good! The shrimp and crispy bacon add a nice texture to the guacamole as well as flavor!

Ingredients

1 large avocado

6 medium cooked shrimp

2 crispy strips of bacon

jalapeno slices

1 1/2 Tablespoons diced red onion

1 Tablespoon cilantro

juice from 1/2 of a lime

salt and pepper

How to Make Loaded Bacon Shrimp Guacamole

This recipe is super easy to make but is a big time show stopper packing a lot of flavor!

Start by mashing your avocado smooth with the lime, salt and pepper in a bowl. The lime adds some great flavor but also helps keep the guacamole green if you do not enjoy it all in one sitting.

Next roughly chop up the shrimp. You can use precooked frozen shrimp for ease or pan sear some raw shrimp. If you are pan searing you can create a crust on the shrimp adding even more texture to the guacamole! Add the shrimp along with the broken up pieces of bacon into the bowl.

Dice up 4 slices of jalapeno and add it into the bowl as well. Depending on your heat tolerance you will want to adjust the amount of slices to your liking. I am a fan of heat but my family is not so we compromise at 4 slices. If you are using raw jalapeno for this step be careful! Depending on how the pepper grew will determine its heat and the seeds will always make it much hotter! KEEP THIS IN MIND! And never touch your face or eyes! I learned the hard way. Don’t be like me.

Lastly add the chopped red onion and cilantro to the bowl and mix. Just a few steps and you have an amped up guacamole that will rock your socks off! For best textures serve immediately with tortilla chips and margaritas! If you want to make this ahead of time keep the bacon out on the side and mix it in right before you are ready to eat. The bacon will loose its crispiness as it sits.

  • 6 medium cooked shrimp
  • 2 crispy strips of bacon
  • jalapeno slices
  • 1 1/2 Tablespoons diced red onion
  • 1 Tablespoon cilantro
  • juice from 1/2 of a lime
  • salt and pepper

Instructions

  • Start by mashing your avocado smooth with the lime, salt and pepper.
  • Roughly chop up the shrimp and bacon and add it to the avocado.
  • Dice up 4 slices of jalapeno and add it to the avocado as well. Adjust the amount of slices to your heat preferences.
  • Lastly add the chopped red onion and cilantro to the bowl and mix. Serve immediately with tortilla chips and margaritas!
