Brulee Brie Cheeseburgers with Crispy Prosciutto

When I think about comfort guilty pleasure meals I dream about burgers and fries! There is a reason why the combo has stood the test of time! It’s just good! I am all about a greasy ooey gooey smash cheeseburger but sometimes I just need a little bit more from my burger. Enter this Brulee Brie Cheeseburgers with Crispy Prosciutto.

Everything about this burger screams over the top! It is a burger on steroids! We step up the bacon by subbing it out for a salty good slice of prosciutto. If you can even imagine it, the prosciutto is kicked up a few more notches by crisping it up in the oven! Like bacon but fancier!

You can’t forget the cheese either and you bet I didn’t on this burger! Your classic cheeseburger gets an upgrade with a nice slice of brie. Then to turn it up a couple more notches were going to sprinkle over some sugar and brulee it! Don’t lie I know your drooling right now because I know I am!

Ingredients

1 lb ground turkey

1 cup arugula

4 1 ounce brie slices

4 tsp sugar

8 pieces of prosciutto

4 hamburger buns

Rosemary Aioli

4 Tbsp mayo

1 Tbsp rosemary

How to Make Brulee Brie Cheeseburgers

Preheat the oven to 375 degrees. For easier clean up line a tray with aluminum foil. This way you can just ball it up and throw it away! No need to clean! Align the prosciutto pieces on a aluminum lined pan so that they are not touching. This will help them crisp up better. Bake the prosciutto for about 13-15 minutes depending on your oven until crsipy.

While the prosciutto is cooking it’s time to focus on the burger! Gently form the ground turkey into 4 patties. You don’t want to mess with the meat too much because it can create a tough texture. Just simply portion the meat out and gently shape them in to patties slightly larger than the size of your buns. Generously season both sides heavily with salt and pepper. You are going to want to salt the patty to what you think it needs and then add another sprinkle for good measure. Trust me this is what makes a turkey burger actually taste great!

I personally like a well seasoned cast iron pan for everything but a non stick skillet will work here too. Preheat the pan over high heat and let it get hot! I mean ripping hot you can’t stick your finger on it to make sure it’s hot! Quickly add a splash of olive oil and place the patties in the pan. Immediately reduce the heat to medium! By starting at a high heat you will get a nice crust on this side and lock in all of the moisture. Cook the first side for 7 minutes and then flip to cook the other side for another 7 minutes.

If your crust is getting too dark you can flip before the 7 minutes but you will need to cook the second side longer and add a lid for the amount of time you flipped early. Pull the patties when they reach an internal temperature of 165 degrees.

After you pull the patties, turn the heat back up to high. Brush the cut side of your hamburger buns with melted butter and toast in the pan until brown. If you are using a fatty meat like beef you will be able to skip the melted butter.

I like to mix the rosemary aioli in advance so that the rosemary can infuse but it can be done last minute too if you do not have the time. It is so simple to make you just need to mince the rosemary and mix it together with mayo. Bam you are ready to slather up that burger!

Now it’s time to build the burger! The moment we have all been waiting for! Start by slathering the bottom bun with 1 1/2 teaspoon of the rosemary aioli. Next add 2 slices of prosciutto and top with the burger patty. Lay a slice of brie on top and sprinkle over 1 teaspoon of sugar. Using a brulee torch caramelize the sugar. Be careful because if the burger is tilted and you brulee too long the caramelized layer can slip off! Top with 1/4 cup of arugula and finish it off with the top bun smothered with another 1 1/2 teaspoon of rosemary aioli. Enjoy your Brie Brulee Cheeseburgers with a pile of fries or side salad!

  • In a cast iron pan preheated over high heat—add a splash of olive oil, place the patties in the pan and reduce the heat to medium. Cook for 7 minutes, flip and cook the other side for another 7 minutes. Pull when the patties reach an internal temperature of 165 degrees.
  • After you pull the patties, turn the heat back up to high. Brush the cut side of your hamburger buns with melted butter and toast in the pan until brown.
  • Create the rosemary aioli for the burger by mincing the rosemary and mixing it together with the mayo.
  • Time to build the burger! Start by slathering the bottom bun with 1 1/2 teaspoon of the rosemary aioli. Next add 2 slices of prosciutto and top with the burger patty.
